MINI MEATLOAF MUFFINS

Ingredients:

1/2 tsp garlic powder

1 tbsp barbecue sauce

1/2 c onion, chopped

1 tbsp mustard

1 1/2 lbs. lean ground beef (or ground turkey)

2/3 c panko bread crumbs

1/2 tsp freshly ground black pepper

1/2 tsp salt

1 Egg, lightly beaten

1 1/2 tsp chilli powder

Meatloaf Sauce:

1/4 tsp ground nutmeg

2 tsp Dijon mustard

1/3 c light brown sugar

1/2 c ketchup

Directions:

Prepare the oven and preheat to 175 degrees C or 350 degrees F.

Add egg, onion, ground beef, mustard, breadcrumbs, 1 tablespoon BBQ sauce, salt, chilli powder, garlic salt, and pepper into a large bowl. Use your clean hands to mix everything until well blended.

Fill each cup of a 12-cup muffin tin with the meat mixture.

Place the tin inside the preheated oven and bake for about 15 minutes.

Add the sauce ingredients into a large bowl. Stir everything until well blended.

Remove the meatloaf from the oven, then discard any excess fat with paper towels.

Add sauce over the meatloaf and spread it evenly.

Put it back inside the oven and bake for a few more minutes.

Remove from the oven and allow it to cool for a few minutes at room temperature.

Serve warm with more sauce. Enjoy!

Note:

Serve this with rice or mashed potatoes.
