Ingredients:
1.5 lb ground beef
1 chopped onion
1 pkg taco seasoning mix
10 ounces can Rotel not drained
2.25 ounces can of sliced black olives
15 ounces can of corn drained
4 taco size flour tortillas
2 c cheddar cheese divided
Directions:
Place a skillet on the stove and turn the heat to medium.
Add the ground beef and onions. Cook for a few minutes until the beef is brown and the onions are translucent.
Add the taco seasoning and water. Stir until well combined.
Cook everything for about 10 minutes.
Add the corn, olives, and Rotel. Stir until well mixed.
Apply cooking spray in a 9×13-inch baking dish.
Arrange the tortillas into the prepared baking dish.
Add 1/2 of the meat mixture over the tortillas and spread it evenly.
Sprinkle 1 cup of cheese on top.
Repeat the process until everything is arranged in layers ending with cheese.
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Place the baking dish inside the preheated oven and bake for 20 minutes or until done.
Remove from the oven and allow it to cool for a few minutes at room temperature.
Serve with your preferred toppings. Enjoy!
