Ingredients:
14 ounces can of diced tomatoes with Italian herbs
2 tbsp corn starch
2 tsp minced garlic
2 tbsp finely chopped fresh basil
3/4 c evaporated milk or heavy cream
4 boneless skinless chicken breasts
1 tsp salt
1/2 tsp dried basil
1/4 tsp black pepper
3/4 c tomato pasta sauce
Directions:
Add the pasta sauce and tomatoes into a 3 or 6-quart slow cooker. Stir until just blended.
In a bowl, add corn starch and water. Stir until well blended.
Pour the mixture into the slow cooker, then stir everything until well blended.
Add basil, salt, garlic, and pepper. Stir until well blended.
Arrange the chicken breasts on top of the sauce and press them gently.
Cover and seal the slow cooker, then cook everything for about 5 hours on a low setting.
Remove the cover, then add basil. Stir until well blended.
Serve over pasta, salad, or rice. Enjoy!
Note:
Feel free to add chilli powder to this for a spicy version!
