SLICED BAKED POTATOES RECIPE

There’s a secret to these little baked slices of potato heaven that I’m going to let you in on. This secret is the very reason that my husband almost fell over when he ate them. He doesn’t even care for potatoes that much, (I know, sinful, barely forgivable even, because potatoes are amazing), but these suckers? He could eat them all day long.

So, what’s the secret?

You brush the baked potato slices with bacon drippings. (Okay fine, grease. Bacon grease. I was trying to be dainty about it.)

But it just makes these so gosh darn flavorful. I mean, as if topping them with cheese and crispy bacon isn’t enough, whew.

These baked potatoes topped with bacon, melted cheese, green onions and sour cream make a great side for steak or light dinner. Enjoy!

HOW TO MAKE THE PERFECT CRISPY OVEN BAKED POTATO SLICES

I love how simple these baked potato rounds are. They are thinner and therefore bake through quicker than regular potato wedges. This is why I prefer making them when I need a quick potato side dish.

Step 1: Peel the potatoes. Wash them. Pat them dry. Slice them thinly and evenly with a knife or even better: with a mandoline slicer.

Step 2: Place the potato slices on a baking tray lined with parchment paper. Add the olive oil, salt, and cracked pepper on top.

Step 3: Mix the potatoes around until they are all coated. I usually fold one side of the parchment paper over and swirl them around (that way I don’t have to get my hands or a spoon oily).

Step 4: Lay them flat on the parchment paper without overlapping each other.

Step 5: Bake the potato slices in the oven for about 20 minutes or until golden. Enjoy as a side dish or as a delicious snack with a dip!

Ingredients

Baking potatoes
Cheddar cheese, grated
Bacon, cooked and crumbled
Green onions, sliced
Sour cream

Instructions

Preheat oven to 400°F. Brush both side of potato slices with butter; place them on a cookie sheet. Bake for 30 to 40 minutes, or until lightly browned on both sides, turning once. When potatoes are ready, top with crumbled bacon, cheese, green onion. Return to oven and continue baking until the cheese has melted. Add a dollop of sour cream when done and enjoy!

Notes

You can also poke holes in the potatoes and microwave them for six minutes instead of baking.
