Ingredients
1 tsp sugar
1 c. cold buttermilk
2 tsp baking powder
2 c. all-purpose flour more for counter
½ tsp baking soda
¾ tsp kosher salt
8 tbsp butter plus one more for brushing
¼ c. finely sliced fresh chives extra for garnish, if desired
1 ¼ c. finely shredded cheddar cheese
How to make Ridiculously Easy Cheddar Chive Biscuits
Step 1: To the middle position, adjust the oven rack, then preheat to 425 degrees F. Using parchment paper, line a sheet pan and grease with cooking spray.
Step 2: Freeze 1 cup of buttermilk for about 10 minutes.
Step 3: In a microwave-safe bowl, place the butter and cover with a paper towel. Heat in the microwave for about 30 seconds on high. You can continue heating for 10-second intervals until the butter has melted, then keep it aside to cool.
Step 4: In a large bowl, combine the flour, baking powder, baking soda, sugar, and salt until blended. Stir in the cheese and chives.
Step 5: Take the buttermilk out of the freezer after 10 minutes and mix with melted butter using a fork until you have small clumps or globules.
Step 6: To the dry ingredients, add the buttermilk and mix well using a sturdy spatula just until the flour is combined and the batter pulls away from the sides of the bowl. Add 1 tbsp of flour if the dough is still wet until you have a fairly stiff dough.
Step 7: On your work surface, generously spread the flour. Turn the biscuit dough onto the floured surface to coat the surface. Knead for about 20 to 30 seconds (about 5 to 6 times), then flip to coat the other side with flour and pat into a 6-inch square with 1 ½-2-inches height.
Step 8: Using a biscuit cutter, cut as many biscuits. On the prepared sheet pan, transfer the biscuits with about 1 ½ inch of space between each piece. Bake in the preheated oven for about 10 to 15 minutes until the tops are crisp and medium golden brown. Make sure to check after 8 minutes of baking.
Step 9: Meanwhile, melt the rest of the butter. Brush the tops of the biscuits with the melted butter immediately after taking them out of the oven and sprinkle with extra finely sliced fresh chives.
