Ingredients:
3/4 c freshly grated Parmesan cheese
1/2 lemon (zest, plus juice)
2 tbsp fresh parsley (cut small or chopped)
1/2 tsp garlic powder
1 1/4 tsp paprika
3 tbsp salted butter
1 1/2 pounds fresh cod
Directions:
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Apply cooking spray on a rimmed baking sheet.
In a mixing bowl, add the Parmesan cheese, paprika, and garlic powder. Whisk until well combined.
Slice the lemon, then squeeze and zest. Put it into the cheese mixture and stir until well blended.
Finely chop the parsley and add it to the cheese mixture. Stir until well mixed.
Check if the fish has bones and use paper towels to pat it dry.
Place a pan on the stove and turn the heat to medium.
Add butter and allow it to melt.
Dip the fish into the melted butter, then into the cheese mixture. Make sure to coat all sides completely.
Arrange the fish into the prepared baking sheet and spread the remaining butter on top.
Place it inside the preheated oven and bake for about 15 minutes.
Add lemon juice over the fish.
Serve and enjoy!
Notes:
Serve this dish with bread with garlic butter.
You can also serve it over rice.
