Total crowd-pleasers, these Loaded Scalloped Potatoes are a must-try! Enjoy the delicious flavors of the creamy sauce, caramelized onions, bacon, and cheese in each bite!
Ingredients:
8 ounces cheese I used a combination of sharp cheddar and Gruyere, any cheese will work
4 tablespoons all-purpose flour
4 tablespoons unsalted butter
12 ounces of bacon, cooked and crumbled
salt and pepper to taste
3 pounds of potatoes, thinly sliced (use Yukon or russet)
2 tablespoons extra virgin olive oil
3 cups whole milk
2 onions, medium, thinly sliced
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Apply cooking spray to a 9×13-inch baking dish.
Place a medium skillet on the stove and turn the heat to medium.
Add olive oil and allow it to become hot.
Add the onion slices into the hot skillet, then cook for a couple of minutes until caramelized. Season with salt and pepper to taste.
Transfer the onions onto a clean plate.
In the empty skillet, add bacon and cook for a few minutes until crispy.
Transfer the crispy bacon onto a clean plate.
Use paper towels to wipe clean the skillet.
Put the skillet back on the stove and turn the heat to medium.
Add butter and allow it to melt.
Add flour, then whisk and cook for about 2 minutes or until it turns into a roux.
Pour in the milk gradually and whisk every addition until well blended. Allow the mixture to simmer until thick. Remove from the heat.
To Assemble:
Add 1/2 of the potatoes, 1/2 of the caramelized onions, 1/2 of the bacon, 1/2 of the cheese, and 1/2 of the sauce into the baking dish. Arrange them in layers. Repeat the process with the rest of the ingredients until everything is arranged in layers.
Cover the baking dish with aluminium foil.
Place it inside the preheated oven and bake for about an hour.
Remove the foil cover, then bake for 30 more minutes or until the potatoes are fork-tender.
Remove from the oven and allow it to rest for a few minutes at room temperature.
Serve warm and enjoy!
