HOLIDAY BRUNCH CASSEROLE

Christmas is fast approaching! If you want a new dish to serve on Christmas eve, give this one a try. It’s simple, delicious, and budget-friendly! All the things we look for in a holiday meal, right? Feel free to add more ingredients to this to make it even better. Enjoy!

Ingredients:

1-pound bacon

2 medium (2-1/2″ dia)s onions, chopped

2 cups fresh sliced mushrooms

1 tablespoon butter

4 cups frozen hash brown potatoes, thawed

1 teaspoon salt

¼ teaspoon garlic salt

½ teaspoon ground black pepper

4 large eggs

1 ½ cups milk

1 pinch dried parsley

1 cup shredded Cheddar cheese

Directions:

Step 1: Place a large skillet on the stove and turn the heat to medium-high.

Step 2: Add in the bacon and cook until greasy and crispy. Remove the bacon and the grease. Set aside.

Step 3: Add in the onion and mushrooms. Cook for 5 minutes or until the onion is translucent and the mushrooms are soft and tender.

Step 4: Brush butter in a 9×13-inch casserole dish.

Step 5: Arrange the potatoes in the bottom. Season with garlic salt, salt, and pepper. Crumble the crispy bacon on top, followed by the mushrooms and onion.

Step 6: In a medium mixing bowl, add in the milk, eggs, and parsley. Beat until well mixed.

Step 7: Transfer the beaten egg mixture into the casserole. Sprinkle grated cheese on top. Cover with plastic wrap and place inside the fridge to chill overnight.

Step 8: Prepare the oven and preheat to 200 degrees C or 400 degrees F.

Step 9: Remove the casserole from the fridge. Remove the cover and place it inside the preheated oven and bake for 1 hour or until cooked through.

Step 10: Remove from the oven and let it sit at room temperature to cool.

Step 11: Serve and enjoy!

Note:

If you do not have time to spare, you can bake it the same day. Set the bake time to 45 minutes instead of 1 hour.
