GREEN CHILE CHEDDAR BISCUITS

Ingredients:

5 tbsp cold butter

1 c cold buttermilk

⅓ c diced green chillies (rinsed well)

1 c finely shredded cheddar cheese

¼ tsp baking soda

½ tsp white pepper

2 c all-purpose flour

1 tbsp baking powder

Additional shredded cheddar for the top of biscuits

1 tsp salt

Directions:

Prepare the oven and preheat to 218 degrees C or 425 degrees F.

Line with parchment paper a cookie sheet.

Add baking powder, flour, baking soda, salt, and pepper into a mixing bowl. Whisk until well blended.

Slice the cold butter, then toss them into the bowl with the flour mixture.

Add buttermilk and stir until well blended.

Add the green chilis and cheese, then stir again until well blended.

Sprinkle flour onto a flat surface.

Transfer the dough onto the floured surface, then knead about 5 times to turn it into a 1/2-inch thick round shape.

Slice into 2-inch pieces, then add them onto parchment paper. Make sure to leave a small space between each biscuit dough.

Sprinkle a generous amount of shredded cheese over the biscuits.

Place them inside the preheated oven and bake for about 15 to 18 minutes or until they turn golden brown.

Remove from the oven and allow them to cool completely at room temperature.
