Ingredients
For the Cheesecake Filling:
8 oz cream cheese, softened
1/4 cup powdered sugar
1/2 tsp vanilla extract
1/4 cup diced fresh strawberries
For the Wontons:
20 wonton wrappers
1 small bowl of water (for sealing edges)
Oil for frying (vegetable or canola)

Powdered sugar, for dusting
Whipped cream (optional)
Fresh strawberries (optional)
For the Strawberry Dipping Sauce:
1 cup fresh strawberries, diced
1/4 cup granulated sugar
1 tsp lemon juice
Instructions:
1. Prepare the Cheesecake Filling:
In a bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth.
Gently fold in diced strawberries. Set aside.
2. Fill the Wontons:
Lay out a wonton wrapper on a flat surface.
Place about 1 tsp of cheesecake filling in the center of the wrapper.
Dip your finger in water and run it along the edges of the wrapper.
Fold the wrapper diagonally to form a triangle and press to seal the edges tightly. You can also bring the corners together to form a pouch-like shape, pinching to secure.
Repeat with the remaining wonton wrappers and filling.
3. Fry the Wontons:
Heat about 2 inches of oil in a deep pot or frying pan to 350°F (175°C).
Carefully place a few wontons at a time into the hot oil and fry for 2-3 minutes, or until golden brown and crispy.
Remove and drain on paper towels.
4. Make the Strawberry Dipping Sauce:
In a small saucepan, combine diced strawberries, sugar, and lemon juice.
Cook over medium heat, stirring occasionally, until the strawberries break down and the mixture thickens (about 5-7 minutes).
Remove from heat and let cool.
5. Serve and Garnish:
Arrange the fried wontons on a plate.
Dust with powdered sugar.
Serve with strawberry dipping sauce, whipped cream, and fresh strawberries on the side.
