Ingredients for the Greek yoghurt sauce:
2 garlic cloves, minced
1 tbsp olive oil
2 tbsp fresh lemon juice
1 c Greek yoghurt
½ tsp salt
2 tsp grated lemon zest
Ingredients for the burgers:
2 tbsp chopped cilantro
1 large egg, lightly beaten
3 garlic cloves, minced
1 tsp ground cumin
1 tsp ground coriander
1 tsp salt
1 pound ground chicken
1 medium zucchini, coarsely chopped
3 green onions, thinly sliced
½ tsp freshly ground black pepper about 3-4 tbsp olive oil for searing
½ c panko bread crumbs
½ medium red bell pepper, finely diced
1 ear of fresh corn husks and silk removed and kernels cut from the cob
Ingredients for the Tomato-Cucumber Relish:
1 clove of garlic, minced
1-pint cherry or grape tomatoes, quartered
⅓ medium seedless English cucumber, finely diced
2 tbsp fresh lemon juice
2 green onions, finely sliced
A pinch of salt
¼ c finely chopped fresh cilantro
zest of 1 lemon
Directions:
In a large mixing bowl, add all the ingredients for the Greek yoghurt sauce. Stir until well blended. Place the bowl inside the fridge.
Prepare the oven and preheat to 218 degrees C or 425 degrees F.
Add all the ingredients for the burger into a mixing bowl aside from the oil. Use your clean hands to mix everything until well blended. Form into even-size patties.
Place a large frying pan on the stove and turn the heat to medium.
Add oil and allow it to become hot.
Add the burgers and sear each side for 2 minutes or until they turn golden brown.
Move the burgers onto a baking sheet.
Place the baking sheet in the preheated oven and bake the burgers for about 7 to 10 minutes or until done.
Meanwhile, add all the ingredients for the tomato-cucumber relish. Stir until well blended.
Serve the burgers with the relish. Enjoy!
