Ingredients:
1 pounds chicken tenderloins
Salt and pepper
1/2 tsp garlic powder
2 tbsp olive oil
1 stick butter (1/2 cup)
2 tbsp minced garlic*
1/4 tsp red pepper flakes
1 1/2 tsp salt, divided
1/2 c dry white wine
1 1/2 c uncooked white rice
3 c chicken broth
1/2 c fresh grated parmesan cheese
Directions:
Step 1: Season with garlic powder, salt, and pepper the chicken tenderloins.
Step 2: Place a large nonstick skillet on the stove and turn the heat to medium.
Step 3: Add olive oil and allow it to become hot.
Step 4: Add the chicken tenderloins and cook until brown.
Step 5: Remove the tenderloins from the skillet and place them on a clean plate lined with paper towels to drain any excess oil.
Step 6: In the same skillet, add butter and allow it to melt.
Step 7: Add the garlic, pepper flakes, and season with 1/2 teaspoon of salt. Saute for about 3 minutes or until aromatic.
Step 8: Adjust the heat to medium-high.
Step 9: Add in the white wine and stir until well blended. Simmer for 5 minutes or until the amount of the sauce has reduced.
Step 10: Remove from the heat and reserve 2 tablespoons of the sauce.
Step 11: In the skillet with the sauce, add the rice. Put it back on the heat and cook for 4 minutes or until the rice becomes a little brown.
Step 12: Add in the chicken broth and salt. Allow the mixture to boil.
Step 13: Cover the pan and reduce the heat to medium-low. Cook the rice for another 20 minutes. Make sure to stir after 15 minutes.
Step 14: Add Parmesan cheese and lay the chicken over the cheese.
Step 15: Drizzle the reserved sauce on top.
Step 16: Cover the skillet and remove it from the heat.
Step 17: Allow the skillet to sit at room temperature to cool for at least 5 minutes.
Step 18: Sprinkle chopped parsley and Parmesan cheese on top.
