CHICKEN FRIED CHICKEN

INGREDIENTS :

6-8 thin-sliced chicken breasts
2 c flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon pepper
1 teaspoon garlic powder
1 1/2 c buttermilk
1 Egg
1 tablespoon hot sauce
Oil for frying
Gravy:
1/4 c reserved oil from frying
1/3 c flour
2 c milk
Salt & pepper

INSTRUCTIONS :

Step 1: Place a large pan or a deep dryer on the stove and turn the heat to 325 degrees F.

Step 2: Add in oil and allow it to become hot.

Step 3: In a large mixing bowl, add the flour, baking soda, baking powder, garlic powder, salt, and pepper. Whisk until well combined.

Step 4: In a separate bowl, add the egg, hot sauce, and buttermilk. Whisk until well mixed.

Step 5: Dredge each chicken into the flour mixture, then into the egg mixture, then back to the flour mixture. Press the chicken into the flour mixture to make sure they are well coated.

Step 6: Fry the chicken for about 3 to 5 minutes per side or until golden brown. Place the fried chicken on a clean plate lined with paper towels to drain excess oil.

Step 7: In a large pan, add 1/4 of the used oil and allow it to become hot over medium-high heat.

Step 8: Add in the flour and stir for about a minute.

Step 9: Add in the milk moderately and whisk until the texture becomes thick. Season with salt and pepper to taste.

Step 10: Top each chicken with the gravy.

Step 11: Serve and enjoy!
