CHEESY SAUSAGE POTATO SOUP

A very flavorful soup coming your way! This Cheesy Sausage Potato Soup is my ultimate comfort food! A very simple recipe you can try that I’m sure you and your loved ones are going to enjoy!

Ingredients:

3½ c (about 2 large) russet potatoes, peeled and diced medium

3 garlic cloves, minced or pressed

4 c (2 15-ounce cans) of chicken broth

½ c finely diced onion

2 celery ribs, diced small

5 tbsp (71g) butter salted or unsalted is fine

2 c milk any percentage

¼ c and 1 tablespoon (44g) all-purpose flour

1 tbsp olive oil

1 14 oz. smoked sausage, chopped into ½-inch pieces

¼ tsp black pepper

Salt

Sour cream, optional for topping

6 oz (about 1½ cups) shredded cheddar cheese, plus more as desired for topping

Directions:

Place a large pot on the stove and turn the heat to medium.

Add olive oil and allow it to become hot.

Add the sausage, then cook until brown. Move the sausage into a mixing bowl.

In the same pot, add the onions and sauté for 5 minutes or until soft.

Add the garlic, then sauté for a minute or until aromatic.

Add the celery, potatoes, and chicken broth. Stir until well mixed, then allow the mixture to simmer for about 10 minutes or until the potatoes are fork-tender. Mash 1/2 of the potatoes.

Place another pot on the stove and turn the heat to medium.

Add butter and allow it to melt.

Add flour, then whisk and cook for a minute until it turns into a roux.

Add milk, then whisk and cook for 5 minutes or until well blended and smooth.

Turn off the heat, then add cheese and whisk until well blended.

Transfer the cheese sauce into the pot with the soup, then stir until well blended. Season with salt and pepper.

Put the sausage back into the pot, then stir until well incorporated.

Top each serving with cheese and sour cream.
