It doesn’t get any better than this! These Breakfast Quesadillas are my new favorite! They are very easy to make. In just 15 minutes, yes you read it right, you can enjoy these delicious treats! Serve them with your favorite cup of coffee, and you have yourself a breakfast to remember!
Ingredients:
8 oz. cheddar cheese, grated or sliced thin
6 large Eggs
8 large flour tortillas
6 slices bacon
salt and freshly ground black pepper, to taste
For serving:
salsa, sour cream, and guacamole
Directions:
Place a large skillet on the stove and turn the heat to medium.
Add the chopped bacon, then cook for a few minutes until crispy.
Leave about 1 tbsp of the bacon grease in the skillet, then remove the rest.
In a mixing bowl, add the cracked eggs. Add a bit of milk, then whisk until well blended.
In the skillet with the bacon, add the beaten eggs. Sprinkle salt and pepper to taste. Scramble the eggs for a few minutes.
Add shredded cheese to one tortilla, then spoon some of the bacon and scrambled eggs on top.
Add more cheese over the eggs, then top it with another tortilla.
Add the quesadilla into the skillet, then cook each side for a minute or two or until golden brown.
Serve right away with sour cream, guacamole, or salsa. Enjoy!
Notes:
Feel free to add veggies to this if you prefer. Make sure to sauté them after the bacon.
Place any leftovers in an airtight container, then place them inside the fridge. They can last up to 4 days or 3 months in the freezer. Reheat in the oven or microwave.
