Servings: 4-6 nests
Prep Time: 15 minutes
Cook Time: 20-25 minutes
Ingredients:
For the Cabbage Nests:
3 cups shredded green cabbage
½ teaspoon salt
½ teaspoon garlic powder
½ teaspoon paprika
¼ teaspoon black pepper
1 egg, beaten
¼ cup Parmesan cheese (or nutritional yeast for dairy-free)
1 tablespoon olive oil
For the Burger Patties:
- 1 lb ground beef (or turkey/chicken)
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon smoked paprika
- 1 teaspoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- 1 small onion, finely chopped
- 1 clove garlic, minced
- 1 tablespoon olive oil (for cooking)
Instructions:
Step 1: Prepare the Cabbage Nests
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a bowl, mix shredded cabbage with salt, garlic powder, paprika, black pepper, egg, Parmesan, and olive oil.
Divide mixture into 4-6 mounds on the baking sheet. Use your hands to shape them into nest-like circles with a slight indentation in the center.
Bake for 12-15 minutes until the edges turn golden and slightly crisp.
Step 2: Make the Burger Patties
In a bowl, mix ground meat with salt, pepper, paprika, Worcestershire sauce, Dijon mustard, onion, and garlic.
Form into 4-6 small patties that will fit inside the cabbage nests.
Heat olive oil in a skillet over medium heat. Sear patties for 2-3 minutes per side, then transfer to the baking sheet.
Step 3: Assemble & Bake
Place each seared patty inside a cabbage nest.
Bake for 10-12 more minutes, or until patties are fully cooked (160°F/71°C for beef, 165°F/74°C for poultry).
Serving Suggestions:
Top with melted cheese in the last 5 minutes of baking.
Add a fried egg on top for extra protein.
