EASY ROTISSERIE CHICKEN TACOS

Try this recipe the next time you have a party! I promise you that these Rotisserie Chicken Tacos are total crowd-pleasers and that they will be gone in just a few minutes! Chicken, cheese, tortillas, and a lot more in each bite. You are so in for a treat!

Ingredients:

1 tsp ground cumin

4 c. shredded iceberg lettuce

12 white or yellow 6-inch corn tortillas

1 c. water

6 tbsp vegetable oil

½ tsp coriander

2 tbsp tomato paste

8 oz. Monterey jack cheese, shredded

8 oz. pepper jack cheese, shredded

2 c. salsa (homemade or simply use your favorite jarred salsa)

1 small rotisserie chicken, meat removed from the bones (you’ll need about 1½ lbs of picked chicken meat)

1 tsp chili powder

Toppings:

Sour cream

Thinly sliced red onion

Sliced black olives

Fresh cilantro

Avocado wedges

Lime juice

Sliced pickled jalapenos

Directions:

Prepare the oven and preheat to 225 degrees C or 450 degrees F.

Prepare a roasting pan that can fit 12 tacos and brush it with oil.

Place a large skillet on the stove and turn the heat to medium.

Add tomato paste, salsa, and water. Stir until well blended. Cook for about a minute.

Add cumin, coriander, and chili powder. Stir until well blended.

Use two forks to shred the chicken, then put them into the skillet and stir until well incorporated.

Add the corn tortillas into the prepared pan, then brush each with oil.

Top each tortilla with Pepper Jack cheese.

Add chicken over each tortilla followed by more Pepper Jack cheese.

Put the pan in the preheated oven and bake the tacos for about 12 to 15 minutes or until done.

Remove the pan from the oven, then top each with lettuce and fold it in half.

Put them back into the pan. Sprinkle Monterey Jack cheese over each taco.

Put them back in the oven. Turn it off and allow the tacos to sit inside for about 5 minutes.

Top each taco with your favorite toppings.
