Ingredients:
2 Eggs
½ tsp vanilla
½ c Greek yoghurt
2 peaches, sliced into wedges
6 ounces blueberries
1 c sugar
½ tsp baking soda
1 ½ c all-purpose flour
2 ounces butter, softened
1 tsp baking powder
1 tsp granulated sugar
Directions:
Prepare the oven and preheat to 175 degrees C or 375 degrees F.
Apply cooking spray and line with parchment paper a 9×13-inch springform pan.
In a mixing bowl, sift together baking soda, flour, and baking powder.
In the bowl of a stand mixer, add 2 eggs, butter, and sugar. Beat for about 2 minutes or until smooth.
Add Greek yoghurt and vanilla, then beat until well blended.
Add the flour mixture, then beat until just incorporated.
Pour the batter into the prepared pan and spread it evenly.
Add the blueberries and peaches over the batter.
Sprinkle 1 tsp of granulated sugar over the fruits.
Place it inside the preheated oven and bake for about an hour or until a toothpick comes out clean after inserting it in the middle.
Remove the cake from the oven and allow it to cool at room temperature for about 40 minutes to 1 hour.
