CARAMEL APPLE MINI CHEESECAKES {WITH STREUSEL TOPPING}

Ingredients:

Crust

6 tablespoons unsalted butter, melted

2 1/2 tablespoons granulated sugar

1/4 teaspoon ground cinnamon

10 graham crackers sheets, finely crushed (1 1/3 c)

Streusel

1/4 c unsalted butter, cold and diced into 1/2-inch cubes

1/4 c + 2 Tbsp packed light-brown sugar

1/2 c all-purpose flour

1/4 c quick oats

1/8 teaspoon salt

1/8 teaspoon ground nutmeg

1/4 teaspoon ground cinnamon

Filling

2 large Eggs

1/4 c sour cream

1 pound granny smith apples, peeled, cored, and finely chopped*

2 (8 ounces) pkg cream cheese, softened

2 teaspoons lemon juice

1 teaspoon vanilla extract

2/3 c granulated sugar

Topping

Salted caramel sauce, see notes for recipe

Directions:

Crust:

Prepare the oven and preheat to 162 degrees C or 325 degrees F.

Add sugar, cinnamon, and graham cracker crumbs into a bowl. Whisk until well blended.

Add butter, then stir until well blended as well.

Line muffin cups with parchment paper.

Transfer the batter into the prepared muffin cups.

Place them inside the preheated oven and bake for about 5 minutes.

Remove from the oven and allow them to cool completely at room temperature.

Streusel:

Add quick oats, nutmeg, brown sugar, flour, salt, and cinnamon into a bowl. Whisk until well mixed.

Add cold butter and stir until well mixed. Place it inside the fridge to chill.

Filling:

Add lemon juice and chopped apples into a mixing bowl. Stir until well mixed.

Add sugar and cream cheese into the bowl of a stand mixer, then beat until well blended.

Add the eggs gradually and beat every addition until well incorporated.

Add vanilla and sour cream, then stir until well blended.

To Assemble:

Fill each muffin cup with the cheesecake batter, then add the filling on top and spread it evenly.

Scatter the apples on top of the batter.

Sprinkle the streusel on top.

Place them inside the preheated oven and bake for about 25 minutes or until done.

Remove from the oven and allow them to rest for 30 minutes at room temperature.

Place them inside the fridge to chill for at least 3 hours.

Serve chilled with the caramel sauce. Enjoy!
