This recipe has always been a part of my family since I was little. I remember my grandma used to make this all the time! Ingredients:
4 ounces can of diced green chillies (drained)
1 bag of tortilla chips
1 teaspoon ground cumin
1 large can (28 ounces) of red enchilada sauce
1 pound ground beef (or shredded chicken)
1/2 c of salsa
3 c of shredded cheese
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Place a skillet on the stove and turn the heat to medium-high.
Add the ground beef, then cook until crumbly and brown. Discard any excess fat.
Add the cumin, salsa, and green chilis. Stir until well blended.
In a mixing bowl, add the tortilla chips and break them into small parts.
Add the beef mixture on top of the tortilla chips and spread it evenly.
Add the enchilada sauce into the bowl with the tortillas, then stir until well combined.
Add 1 cup of cheese, then toss until well mixed.
Apply cooking spray in a baking dish.
Transfer the enchilada mixture into the prepared baking dish and spread it evenly.
Scatter the rest of the shredded cheese over the enchilada mixture. Feel free to add more.
Cover everything with aluminium foil.
Place it inside the preheated oven and bake the enchiladas for about 50 minutes or until done.
Remove the pan from the oven and allow the enchiladas to cool for a few minutes at room temperature.
Sprinkle more cheese if you prefer.
Serve warm and enjoy!
