Ingredients:
2 x 9ounces/250g Chicken Breasts
1/4 c / 40g Plain / All-Purpose Flour
1/2 c / 120ml Chicken Stock
6 tablespoons / 90g / 3.2ounces Unsalted Butter, divided into tablespoons chunks
2 cloves of Garlic, minced/finely diced
1 tablespoon finely diced Fresh Parsley
1 tablespoon Olive Oil
1 teaspoon Garlic Powder
1 teaspoon salt
1/2 teaspoon Black Pepper, plus more to taste
1 Lemon, divided into 4 wedges (to serve)
Directions:
Step 1: Add the flour, garlic, salt, and pepper into a shallow dish. Whisk until well mixed.
Step 2: Cut the chicken breasts in the middle. This will make 4 equal chicken cuts.
Step 3: Coat each chicken cut with the flour mixture.
Step 4: Place a large pan on the stove and turn the heat to medium-high.
Step 5: Add butter and olive oil, then allow them to melt/become hot.
Step 6: Add the coated chicken breasts and sear each side for 5 minutes or until golden brown. Remove from the pan.
Step 7: Add the garlic and cook for 1 minute or until aromatic.
Step 8: Add the stock. Stir and scrape the bottom to get the brown bits.
Step 9: Add the rest of the butter. Spread and allow them to melt.
Step 10: Add the parsley, salt, and pepper. Stir until just mixed.
Step 11: Simmer everything until the sauce becomes thick.
Step 12: Reduce the heat to low, then put the chicken back to the pan. Toss until well coated with the delicious sauce.
Step 13: Serve and squeeze lemon juice for extra flavour. Enjoy!
