Ingredients:
1 (16 oz) package linguine pasta
2 tbsp butter
2 tbsp extra-virgin olive oil
2 shallots, finely diced
2 cloves garlic, minced
1 pinch red pepper flakes (optional)
1 lb shrimp, peeled and deveined
1 pinch kosher salt and freshly ground pepper
½ c dry white wine
1 lemon, juiced
2 tbsp butter
2 tbsp extra-virgin olive oil
¼ c finely chopped fresh parsley leaves
1 tsp extra-virgin olive oil, or to taste
Directions:
Step 1: Place a large pot with salted water on the stove and turn the heat to high. Allow the water to boil.
Step 2: Add the linguine and cook for about 8 minutes or until al dente. Drain and rinse with cold water to stop the cooking process.
Step 3: Place a large skillet on the stove and turn the heat to medium.
Step 4: Add 2 tablespoons of olive oil and 2 tablespoons of butter, then allow it to become hot and melt.
Step 5: Add the garlic, shallots, and red pepper flakes. Cook for 3 minutes or until translucent.
Step 6: Season with kosher salt and black pepper the shrimp.
Step 7: Add the shrimp into the skillet and cook for about 3 minutes on both sides.
Step 8: Remove the shrimp from the skillet and place them onto a clean plate.
Step 9: In the same skillet, add wine and lemon juice. make sure to scrape the bottom to get the brown bits, then allow the mixture to boil.
Step 10: Add 2 tablespoons of butter and allow it to melt, then 2 tablespoons of olive oil.
Step 11: Add the cooked linguine, parsley, and shrimp into the skillet, then bring it to a simmer.
Step 12: Serve and enjoy!
