What a very healthy and satisfying treat! I have never tried anything like this until now. It has a rich banana flavor that will touch your very soul. And the topping is incredible. I never thought that oats would make a great topping! Give this a try and I am 100 percent sure that you are going to love it! Make sure to make more if you are having guests over because this cake is very luscious that your guests would want to eat the whole thing! Serve it with a nice and cold iced tea and you have yourself a snack to remember. Enjoy!
Ingredients:
½ cup butter softened
⅔ cup packed brown sugar
2 large eggs eggs
1 cup mashed bananas
1 teaspoon vanilla extract
¾ cup all-purpose flour
1 ⅓ cups rolled oats
¼ teaspoon salt
1 teaspoon baking soda
¾ cup rolled oats
⅓ cup packed brown sugar
2 tablespoons butter, melted
2 tablespoons chopped walnuts
½ teaspoon ground cinnamon
Directions:
Step 1: In a small mixing bowl, sift together flour, baking soda, 1 1/3 cups oats, and salt.
Step 2: In a large mixing bowl, add in the margarine or 1/2 cup of butter and sugar. Whisk until creamy.
Step 3: Add in the eggs, vanilla, and bananas. Whisk until well blended.
Step 4: Transfer the flour mixture into the banana mixture and beat until well blended.
Step 5: Grease and flour an 8-inch square pan.
Step 6: Transfer the batter into the prepared square pan.
Step 7: In a medium mixing bowl, add in brown sugar, 3/4 cup oats, 1/3 cup brown sugar, walnuts, cinnamon, and margarine or melted butter. Stir until well mixed then spread the mixture on top of the batter.
Step 8: Plae inside the preheated oven and bake for 40 to 45 minutes at 350 degrees F or until cooked through.
Step 9: Remove from the oven and let sit on a wire rack to cool at room temperature.
Step 10: Serve and enjoy!
