Vanilla Cinnamon Buttermilk Pancakes Fluffy

Ingredients:

2 cups all-purpose flour
2 tablespoons granulated sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
2 large eggs
2 cups buttermilk
1 teaspoon pure vanilla extract
1/4 cup unsalted butter, melted, plus more for greasing the pan

Directions:

In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
In another bowl, beat the eggs and combine with buttermilk, vanilla extract, and melted butter.
Gradually pour the wet ingredients into the dry ingredients, stirring gently until just combined. Avoid overmixing; some lumps are fine.
Preheat a griddle or non-stick skillet over medium heat and lightly grease with butter.
Pour 1/4 cup of batter onto the hot surface for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
Flip and cook for another 1-2 minutes, until golden brown.
Serve warm with maple syrup, fresh fruit, or a dusting of powdered sugar.
