SLOW COOKER HAM AND POTATO CASSEROLE

Creamy ham and potato casserole, with cheddar cheese to serve as the perfect comfort food.

The slow cooker ham and potato casserole is an awesome delicacy that’s perfect at any time of the year. This recipe requires a crockpot so you’ll spend quite a lot of time cooking this, but on the upside, you’ll be glad at the end result f your hours of hard work. This dish is very rich, and actually easy to prepare. You could serve with a salad or crusty bread.

Ingredients

16 ounces sliced ham, divided
10 medium potatoes (3 to 3 1/2 pounds), peeled and thinly sliced, divided
1 medium onion, thinly sliced, divided
Salt and freshly ground black pepper, a pinch
1½ cups grated cheddar cheese, divided
2 cans condensed cream of mushroom soup
½ cup milk
Paprika, to taste

The Process

Step 1: Place one portion of the potatoes, ham and onions in the crockpot, sprinkle with salt and pepper, then add 1 cup of cheese
Step 2: Add the remaining ham, potatoes, and onions to the pot, and then sprinkle a little extra salt and pepper.
Step 3: Combine the condensed soup with the milk in a small bowl. Stir well till they mix evenly. Pour scoops of the soup mix over the potato mix and then top with the remaining cup of cheese.
Step 4: Sprinkle with the paprika, then cover the pot and cook on low heat for about 8 hours for the potatoes to get tender
Step 5: Serve hot or allow to cool for a while and the serve warm. Bon appetit!

Cooking Tips:
Yukon, gold or red potatoes are preferred for this recipe. These potatoes have enough starch, allowing them to remain intact during the cooking process.
You can cook on high heat to speed up the cooking. The potatoes should get soft in 4 hours.

Variations:
You can add sliced celery, mushrooms or diced green peppers along with the onions
You can replace the ham with diced smoked sausage or crumbled cooked bacon. For vegetarians, you can use vegetable sausage crumbles instead.
