SAUSAGE AND RICE – ONE POT!

Ingredients:

1 c cheddar cheese, shredded

2 tbsp butter

2 cloves garlic, minced

3 tbsp olive oil, separated

1 ¼ c white long-grain rice, uncooked

10.75 ounces cream of chicken soup

11 ounces sausage

1 small green bell pepper, sliced

1 pinch red pepper flakes, optional

½ c yellow onion, diced

½ c sour cream

1 small red bell pepper, sliced

¾ c milk

2 ½ c chicken broth

Directions:

Place a large pot on the stove and turn the heat to medium-high.

Add 2 tbsp of olive oil and allow it to become hot.

Slice the sausage into 1/2-inch pieces.

Add them into the pot, then cook until brown. Transfer onto a clean plate.

In the empty pot, add 2 tbsp of butter and allow it to melt.

Add the onions, then sauté for about 5 minutes or until translucent.

Add garlic and sauté until aromatic.

Add 1 tbsp of olive oil and chicken broth, then stir until well blended. Scrape the bottom of the pot to get the browned bits. Allow the mixture to boil.

Add the rice, then cover the pot. Turn the heat down to medium, then simmer everything for about 10 minutes.

Add bell peppers, then cover the pot again. Cook for about 5 minutes.

Remove from the heat, then allow it to rest for a few minutes at room temperature.

Put it back on the stove and turn the heat to low.

Add cheese, sour cream, milk, and cheese. Stir until well blended.

Put the sausage slices back into the pot.

Add red pepper flakes, then stir everything until well blended.

Serve and enjoy!
