Ingredients:
2 c all-purpose flour
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt
5 Eggs, beaten
1 1/4 c vegetable oil
1 (15ounces) can pure pumpkin
2 c granulated sugar
2 (3ounces) package cook and serve vanilla pudding
1 c semi-sweet chocolate chips
Directions:
Step 1: Prepare the oven and preheat to 190 degrees C or 375 degrees C.
Step 2: Apply cooking spray into two 9-inch loaf pans.
Step 3: Add the flour, cinnamon, baking soda, and salt into a medium mixing bowl. Whisk until well mixed.
Step 4: In the bowl of an electric mixer, add the pumpkin, eggs, and oil. Beat until well combined.
Step 5: Add the dry pudding and sugar. Beat until well mixed.
Step 6: Add the flour mixture gradually and stir until well blended.
Step 7: Add the chocolate chips and stir until just mixed.
Step 8: Transfer the batter into the prepared pans and spread it evenly.
Step 9: Place the pans inside the preheated oven and bake for about 15 minutes.
Step 10: Turn the heat down to 175 degrees C or 350 degrees F.
Step 11: Bake the loaves for another 45 minutes or until a toothpick comes out clean after inserting it in the middle.
Step 12: Remove from the oven and allow the loaves to cool at room temperature.
Step 13: Serve and enjoy!
