These heavenly cupcakes will surely hit you right to your heart! The amazing pineapple taste is amazing so make sure to add more if you love pineapples. A very easy treat that will surely light up your day. Enjoy!
Ingredients:
Cooking spray
½ cup butter, melted
1 ½ cups brown sugar
24 cherries maraschino cherries
1 (20 ounces) can crushed pineapple
1 (18.25 ounce) package pineapple cake mix (such as Duncan Hines® Pineapple Supreme)
3 large eggs eggs
1 ⅓ cups pineapple juice
⅓ cup vegetable oil
1 tablespoon confectioners’ sugar for dusting, or as needed
Directions:
Step 1: Place the oven rack in the center of the oven then preheat to 175 degrees C or 350 degrees F.
Step 2: Grease 24 muffin cups and line with waxed paper a work surface.
Step 3: Spread 1 teaspoon of melted butter on the bottom of the greased muffin cups.
Step 4: Sprinkle 1 tablespoon of brown sugar in each cup.
Step 5: Place 1 maraschino cherry in the middle of each muffin cup.
Step 6: Add in a stack of the crushed pineapple in each muffin cup on top of the cherry.
Step 7: In a large mixing bowl, add in the eggs, pineapple juice, pineapple cake mix, and vegetable oil. Mix using an electric mixer on low speed. Mix for 30 seconds or until the texture becomes moist then mix for another 2 minutes at medium speed.
Step 8: Transfer the batter into the muffin cups. Fill each cup to the top.
Step 9: Place inside the preheated oven and bake for 20 minutes or until a toothpick comes out clean after inserting in the middle of a cupcake.
Step 10: Remove from the oven and let it sit on a wire rack to cool for 5 minutes.
Step 11: Invert the cupcakes into the waxed paper. Sprinkle a little of confectioners’ sugar on top of each cupcake.
Step 12: Serve and enjoy!
