MENNONITE CABBAGE POTATO KIELBASA BAKE

This recipe is super delicious! I was not a fan of cabbage but this surely sealed the deal for me that it is fact an awesome vegetable! The combination of flavors in this bowl is superb. I love the texture of all the ingredients. Make sure not to overcook them so you would still have that slightly crunchy cabbage and mushy potatoes! Try adding fresh chilis to take it to the next level! For those who love spicy foods, the chili will be a nice addition. Enjoy!

Ingredients:

1 small head cabbage

2 cups diced potatoes

1 (16 ounces) package smoked kielbasa sausage, sliced

1 cup milk

2 large eggs, beaten

1 teaspoon salt

½ teaspoon ground black pepper

4 slices bread, cut into cubes

½ cup butter, sliced

Directions: 

Step 1: Ready the oven and preheat to 200 degrees C or 400 degrees F.

Step 2: Cut the cabbage and wash the leaves. Set aside the outer leaves.

Step 3: Arrange the outer leaves on the bottom part of a 13×9-inch baking dish. Shred the rest of the leaves.

Step 4: In a medium mixing bowl, add in the shredded cabbage smoked sausage, and potatoes. Stir until well blended.

Step 5: In a separate mixing bowl, add in the eggs, milk, salt, and pepper. Whisk until well mixed then add in the bread cubes. Set aside and wait for about 2 minutes until the bread cubes soak up the mixture.

Step 6: Transfer the soaked bread cubes into the cabbage mixture. Place the butter sliced on top.

Step 7: Place inside the preheated oven and bake for 45 minutes or until the potatoes turn brown and tender.

Step 8: Remove from the oven and let ti sit on a wire rack to cool at room temperature.

Step 9: Serve and enjoy!
