Are you having trouble feeding your kids with healthy meals? This will solve your dilemma for sure! I give you this Broccoli Salad with Bacon and Cheese! My kids could not get enough of this incredible dish. They even tell me to cook this for them. If you want, you can add Cauliflower together with the broccoli for a healthier dish. Sprinkle green onions and parsley on top as well. You are so in for a treat. Enjoy!
Ingredients:
1-pound bacon
1 head broccoli, or more to taste
1 red onion, chopped
1 cup golden raisins
1 (8 ounces) package shredded sharp Cheddar cheese
¾ cup mayonnaise
¼ cup white sugar
1 tablespoon white vinegar
Directions:
Step 1: Place a large skillet on the stove and turn the heat to medium-high.
Step 2: Add the bacon and cook for 10 minutes or until greasy and crispy.
Step 3: Place the crispy bacon on a clean plate lined with paper towels. Allow it to cool for 5 minutes at room temperature.
Step 4: In a medium mixing bowl, add the bacon and crumble.
Step 5: In another mixing bowl, add the cut broccoli, Cheddar cheese, raisins, chopped onions, and crumbled bacon. Stir until well combined.
Step 6: In another mixing bowl, add the mayonnaise, sugar, and vinegar. Stir until well mixed, then pour it into the bacon and broccoli mixture.
Step 7: Stir the bowl until all the ingredients are well coated.
Step 8: Place it inside the fridge to chill.
Step 9: Serve cold and enjoy!
Notes:
You can use golden Thompson raisins instead of black raisins.
You can also use Miracle Whip instead of mayonnaise.
Cut or shredded Cheddar cheese works either way for this recipe.
