JALAPENO POPPER CHICKEN

INGREDIENTS :

1 (8 ounces) package cream cheese, softened
½ cup shredded Cheddar cheese
2 peppers jalapeno peppers, seeded and minced
4 (6 ounces) skinless, boneless chicken breast halves
1 cup seasoned bread crumbs
¼ cup of vegetable oil

INSTRUCTIONS :

Step 1: In a small mixing bowl, add in the Cheddar cheese, cream cheese, and jalapenos. Stir until well mixed.

Step 2: Run a knife on the thickest part of each chicken breast. Cut and fill each with 1/4 of the cheese mixture. Insert a toothpick on the sides to lock the chicken breasts.

Step 3: Dip the filled chicken breasts into the crumbs and coat them generously.

Step 4: Place a skillet on the stove and turn the heat to medium-high.

Step 5: Add in oil and allow it to heat through.

Step 6: Cook the chicken breasts for 8 minutes on each side or until the middle is no longer color pink. A thermometer should read 74 degrees C.

Step 7: Place the fried chicken on a plate lined with a paper towel. Drain the excess oil.

Step 8: Serve and enjoy!
