ITALIAN SAUSAGE PEPPERS AND ONIONS

This recipe has always been a part of my family since I was a little kid! My Grandma used to cook this all the time! Ingredients:

1/4 c extra-virgin olive oil

1-lb sweet Italian sausage

2 bell peppers, sliced

2 yellow onions, sliced

1 tsp kosher salt

1 tsp freshly ground black pepper

1 tbsp Italian seasoning

1/4 cup chopped fresh basil leaves

4 garlic cloves, chopped

2 tbsp tomato paste

1 c Marsala wine (or chicken broth)

1 (15-oz) can diced tomatoes

Salt to taste

1/4 tsp red pepper flakes, optional

Directions:

Place a skillet on the stove and turn the heat to medium.

Add oil and allow it to become hot.

Add the sausages and cook each side for about 10 minutes or until brown.

Remove the sausage from the skillet onto a clean plate.

In the same pan, add basil, garlic, and Italian seasoning. Sauté for about a minute or until aromatic.

Add the tomatoes, tomato paste, Marsala wine, and chilli flakes. Stir until well combined.

Add the onions, peppers, salt, and pepper. Sauté until translucent. Allow the mixture to simmer for a few minutes.

Put the sausages back to the skillet as well as the veggies.

Turn the heat down to low and simmer everything for about 15 minutes or until the texture of the sauce becomes thick.

Serve hot and enjoy!

Note:

This dish is best served with mashed potatoes, rice, and pasta.
