FUNNEL CAKE BITES

Ingredients

2 large eggs
2 tablespoons sugar
1 ¼ cups whole milk
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
¼ teaspoon kosher salt
4 cups vegetable oil
Powdered sugar, for garnish

The process

Step 1: In a large bowl, beat the eggs and sugar until it becomes foamy and pale yellow, and whisk the milk and vanilla extract to the egg mixture.
Step 2: Sift the flour, baking powder and salt together in a separate bowl. Then, add the sifted ingredients gradually into the wet mixture until they are even and smooth with no lumps (Don’t over mix).
Step 3: Fill the pot with approximately 2 to 3 inches of oil and leave it to heat to 375 degree Fahrenheit over medium-high heat.
Step 4: Take about 1/3 scoop of batter and carefully add to the oil. Allow to cook for about 2-3 minutes or until it is golden brown, then flip to the other side to make sure that both sides are golden brown.
Step 5: Remove the funnel cake bites from the hot oil and put in a paper-towel-lined plate.
Step 6: Cover with the powdered sugar and serve immediately.

Tips:
Make sure the oil used in frying reaches 375 degree Fahrenheit before frying. You can use a deep fry thermometer to help you monitor the temperature.
