EASY ZUCCHINI PUFFS

These Easy Zucchini Puffs are superb! I got this recipe a couple of years ago, and I’m still in love with it to this day! I am so excited to share this recipe with you today because I know that you are going to like it! Take those plain zucchinis to the next level with this awesome recipe. This recipe yields 24 servings so everybody gets a bite of these heavenly treats. Enjoy!

Ingredients:

1 Egg

1 c grated zucchini

salt and pepper to taste

¾ c flour

½ c shredded cheddar cheese

¾ c milk

¾ teaspoon baking powder

2 teaspoons Italian Seasoning

Directions:

Zucchini:

Grate the zucchini, then place the pieces over a cheesecloth. Wrap and squeeze to remove extra moisture.

For the Puffs:

Prepare the oven and preheat to 190 degrees C or 375 degrees F.

Add baking powder, Italian seasoning, and flour into a mixing bowl. Whisk until well blended.

In a separate mixing bowl, add milk and egg. Whisk until well incorporated.

Transfer the milk-egg mixture into the bowl with the flour mixture, then beat until well mixed.

Add the cheese and shredded zucchini into the batter, then stir until well blended.

Apply cooking spray to mini muffin pans.

Fill the pans with the batter.

Place the pans inside the preheated oven and bake for about 20 minutes or until a toothpick comes out clean after inserting it in the middle.

Remove Easy Zucchini Puffs from the oven and allow them to rest for a few minutes at room temperature.

Serve and enjoy!

Notes:

You can add your preferred seasonings for this recipe.

Place any leftovers in an airtight container, then place them inside the fridge.
