CREAMY ZUCCHINI SAUCE

This Creamy Zucchini Sauce goes well with pretty much anything! You can use it for pasta, rice, bread, or for this recipe, baked zucchini! The combination of all the ingredients is just too perfect! I got this recipe a couple of years ago, and I’m still in love with it to this day! A quick and easy recipe that you can try even on your busy days! I have listed all the ingredients and directions so all you need to do is to follow them step by step and you are good to go. Enjoy!

Ingredients:

For the Zucchini:

1 tablespoon paprika

2 pounds of zucchini, cubed

salt and pepper to taste

3 tablespoons olive oil

For the Sauce:

1 tablespoon tomato paste

1 c sour cream

2 tablespoons chopped basil

salt to taste

2 tablespoons chopped dill

2 garlic cloves, minced

Directions:

Prepare the oven and preheat to 200 degrees C or 400 degrees F.

In a large non-stick baking tray, add the zucchini, salt, pepper, paprika, and oil. Toss everything until well combined.

Place the tray inside the preheated oven and bake for about 20 minutes or until a bit brown.

Place a skillet on the stove and turn the heat to medium.

Add all the ingredients to the sauce, then stir until well blended. Allow the mixture to simmer, then remove the skillet from the heat.

Transfer the baked zucchini into the skillet with the sauce, then toss until well coated.

Sprinkle freshly chopped herbs on top to garnish.

Serve and enjoy!

Notes:

You can use the sauce over pasta or boiled rice. Just toss it until well coated, then serve.

Place any leftovers in an airtight container, then place them inside the fridge.
