Ingredients:
1 cup mashed banana*
3 Eggs
½ c almond butter
¼ c coconut oil, melted
1 tsp vanilla
½ c (60 grams) coconut flour
½ tsp baking powder
½ tsp baking soda
¼ tsp sea salt
½ c dairy-free mini chocolate chips
Directions:
Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Step 2: Apply coconut oil in a loaf pan.
Step 3: Add the eggs, mashed bananas, coconut, almond butter, and vanilla in a large mixing bowl. Stir until well mixed.
Step 4: Transfer the dry ingredients into the wet ingredients. Stir until well mixed.
Step 5: Add the chocolate chips and stir until well mixed.
Step 6: Transfer the batter into the prepared pan and spread it evenly on the bottom.
Step 7: Place it inside the preheated oven and bake for 45 minutes or until a toothpick comes out clean after inserting it in the middle.
Step 8: Remove from the oven and allow it to cool for at least 20 to 30 minutes at room temperature.
Step 9: Serve and enjoy!
Notes:
Place any leftovers in an airtight container and let them sit at room temperature. It can last for several days.
