Ingredients:
1 9 skillets of cornbread (traditional southern cornbread recipe)
3 slice light bread{regular old sandwich bread)
3/4 cup onion chopped small pieces
3/4 cup celery chopped small pieces
6 hard-boiled Eggs1 1/2 teaspoon poultry seasoning( may add to taste)
2 teaspoon sage, dried (to taste)
1 teaspoon coarse ground black pepper and 1 teaspoon salt(to taste)
2 quarts chicken broth (in addition to where you boiled chicken)
1 can(s) cream of chicken soup
Bouillon for extra flavour (better than bouillon)
1 large fryer chicken
Directions:
Step 1: Slice the chicken and put them in a stockpot.
Step 2: Pour in enough water to submerge the chicken.
Step 3: Add 1 teaspoon of salt and pepper.
Step 4: Place the stockpot on the stove and turn the heat to high. Allow the water to boil.
Step 5: Place the cooked chicken in a bowl. Remove the bones, fat, and skin. Set aside the chicken meat and broth.
Step 6: In a pot, pour in cold water and add in the onion and celery.
Step 7: Add 1/2 teaspoon of salt and pepper.
Step 8: Add in 6 eggs. Make sure they are submerged in water.
Step 9: Place the pot on the stove and turn the heat to high.
Step 10: Bring to a boil for 15 minutes or until everything is done.
Step 11: Peel the eggs and slice them into small cuts.
Step 12: In a large pan, add cornbread and crumble it.
Step 13: Pour in the chicken broth and sliced bread. Stir until the texture becomes moist.
Step 14: Add in the canned broth and stir until the cornbread becomes very moist.
Step 15: Add in the onions, celery, chicken meat, and sliced eggs. Stir until well combined.
Step 16: Season with poultry seasoning, sage, salt, and pepper to taste.
Step 17: Add in cream of chicken soup and stir until well blended. Taste to your preference.
Step 18: Split the mixture into two casserole dishes.
Step 19: Place them inside the oven and bake for 45 minutes at 200 degrees C or until the colour turns brown.
Step 20: Remove from the oven and allow them to sit at room temperature to cool.
