CHEESY GROUND BEEF QUESADILLAS

These homemade quesadillas will make your day extra special! The rich, cheesy flavor of these heavenly treats is so good! A total crowd pleaser and ready in just 35 minutes. Enjoy!

Ingredients:

2 tablespoons Olive Oil, or as needed

6 8-inch Flour Tortillas

Beef

1 teaspoon each: Garlic Powder, Oregano, Salt

1/2 teaspoon each: Onion Powder, Cayenne Pepper, Cornstarch/Cornflour

1/4 teaspoon Black Pepper

Olive Oil, as needed

1 heaped tbsp Tomato Puree (Tomato Paste in the US)

2 teaspoons each: Paprika, Cumin

1/2 c / 125ml Water or Low Sodium Beef Stock

1 pound / 500g Lean Ground Beef

Directions:

Add 1 tsp garlic powder, 2 tsp paprika, 1/4 tsp black pepper, 1 tsp garlic powder, 1 tsp salt, 1 tsp oregano, 1/2 tsp cayenne pepper, and 1/2 tsp onion powder into a mixing bowl. Whisk until well mixed. Set aside.

Place a pan on the stove and turn the heat to medium.

Add a bit of olive oil and allow it to become hot.

Add the red pepper and onion, then sauté for a few minutes until soft.

Add the beef, then cook until crumbly and brown. Add the spices and stir until well blended.

Add 1 tablespoon tomato paste, then cook for a few minutes to remove the raw taste.

Add 1/2 cup of beef broth, then scrape the bottom of the pan to get the browned bits. Stir everything until well blended.

Add slurry and stir until well mixed. Simmer for 5 minutes or until the texture of the sauce becomes thick.

Remove from the heat and transfer everything into a large mixing bowl. Let it rest for a couple of minutes.

Use paper towels to wipe clean the pan.

Place on the stove and turn the heat to medium.

Add a greased tortilla wrap.

Sprinkle 1/4 cup of cheese and 1/2 cup of the beef mixture. Fold the tortilla and cook for a few minutes, then flip to cook the other side. Repeat the process with the rest of the ingredients.

Serve and enjoy!

Notes:

Feel free to add jalapenos if you wish.

I suggest you use lean beef for this recipe.
