BAKED PARMESAN CHICKEN

Ingredients:

1 c light mayonnaise or Greek yoghurt I used ½ of each and it was delish!

1 teaspoon garlic powder

1 1/2 teaspoon seasoning salt

6 chicken breasts

1/2 teaspoon pepper

1/2 c Parmesan cheese and reserve more for top

Directions:

Prepare the oven and preheat to 190 degrees C or 375 degrees F.

Apply cooking spray to a 9×13-inch baking pan.

Add the chicken breasts into the prepared pan and arrange them in a single layer.

In a mixing bowl, add the mayonnaise, garlic powder, seasoning salt, pepper, and Parmesan cheese. Stir until well blended.

Add the mixture on top of each chicken breast and spread it evenly.

Sprinkle grated Parmesan cheese over the chicken breasts.

Place them inside the preheated oven and bake for about 45 minutes or until done.

Remove the chicken from the oven and let them rest for a few minutes at room temperature to incorporate all the flavors.

Serve warm and enjoy!

Notes:

Place any leftovers in an airtight container, then place them inside the fridge. They can last up to 3 to 4 days or 2 to 6 months in the freezer. Reheat in the oven or microwave for a few minutes.

You can marinate the chicken in buttermilk for a few hours before cooking them. Buttermilk makes the chicken juicy and tender.
