BAKED EASY CHEESY ZUCCHINI CASSEROLE RECIPE (ZUCCHINI GRATIN)

Ingredients:

1 tablespoon butter

3 ounces Brie cheese (edges cut off)

3 medium Zucchini (sliced in 1/4-inch-thick slices)

1 1/2 c Swiss Gruyere shredded cheese blend (or any shredded sharp cheese; divided)

2 cloves Garlic (minced or crushed)

1/3 c Heavy cream

1/2 tablespoon Italian seasoning

3/4 teaspoon Sea salt

1/4 teaspoon Black pepper

Directions:

Add the zucchini slices into a colander, then sprinkle salt. Toss until well coated. Let them sit for about 45 minutes. Drain and use paper towels to pat them dry.

Prepare the oven and preheat to 200 degrees C or 400 degrees F.

Lay the zucchini slices in rows, overlapping each other into a 1.5-quart casserole dish.

Sprinkle 1/2 of the cheese in between the rows.

Sprinkle a bit of salt and pepper to season.

Place a saucepan on the stove and turn the heat to low.

Add butter, garlic, Brie, and cream. Stir until well blended. Simmer for a few minutes until the texture becomes smooth. Season with a bit of salt and pepper to taste.

Add the mixture on top of the zucchini mixture and spread it evenly.

Sprinkle the rest of the cheese and Italian seasoning on top.

Place it in the preheated oven and bake for about 35 minutes or until the cheese turns golden brown.

Remove from the oven and allow it to rest for a few minutes at room temperature.

Serve warm and enjoy!
