Smoked to perfection, these Bacon-wrapped Armadillo Eggs will surely become your favorite with just one bite! They are juicy, smoky, and I’m sure everyone is going to love them. This recipe has always been a part of my family since I was little. Now, allow me to share it with you! I have listed all the ingredients and directions so all you need to do is to follow them step by step and you are good to go! Make sure to read the notes below for some tips. Enjoy!
Ingredients:
2 tbsp Homemade Sweet Rub
1 c BBQ Sauce
4 ounces cheddar cheese (shredded)
12 slices bacon
1 lb. pork sausage
4 ounces cream cheese (softened)
6 jalapenos (stems, core, and seeds removed)
Directions:
Prepare the oven and preheat to 250 degrees F.
Add cheddar cheese, 1 tbsp of sweet BBQ seasoning, and cream cheese into a mixing bowl. Stir until well blended.
Add a bit of the cream cheese mixture to each of the prepared jalapenos, then press it with a spoon.
Wrap with 1/6 of the pork sausage for each jalapeno. Make sure to cover each well. Form it into an egg shape.
Coat each with bacon, then use toothpicks to seal each.
Smoke them for about 2 hours.

Notes:
You can brush these armadillo eggs with BBQ sauce if you want.
For this recipe, I used cherry wood to smoke them. Feel free to use your preferred wood. Maple hickory or oak would work perfectly.
You can also cook these in the oven if you do not have a smoker.
