EASY BUTTER CHICKEN RECIPE

Easy, delicious, and spectacular! These three words best describe my experience with this Easy Butter Chicken! Serve it with rice, and you have yourself a meal to remember. Enjoy!

Ingredients:

For the Chicken Marinade:

2 pounds Boneless, skinless chicken thighs, cut into 1-inch chunks

1 teaspoon Ground Cumin

1 teaspoon Kosher Salt

1 teaspoon Chili Powder

2 teaspoon Garam Masala

1 teaspoon Garlic Powder

1½ tablespoon Extra Virgin Olive Oil

For the Sauce:

½ teaspoon Cayenne Pepper

14 oz Tomato Sauce one can

3 tablespoons Clarified Butter, divided

1 Yellow Onion, diced

Kosher salt and freshly ground black pepper

1½ c Coconut Cream well stirred or blended

3 Garlic Cloves, minced

1 teaspoon Chili Powder

1 tablespoon Grated Fresh Ginger

Chopped cilantro, for garnish

1 tablespoon Garam Masala

1 teaspoon Ground Coriander

Directions:

Add the garlic powder, cumin, olive oil, salt, chili powder, and garam masala to a mixing bowl. Stir until well blended.

Add the chicken, then toss until well coated with the delicious marinade.

Cover the bowl with plastic, then place it inside the fridge. Marinate the chicken for 6 hours or overnight.

For the Sauce:

Place a large skillet on the stove and turn the heat to medium-high.

Add 2 tbsp of clarified butter and allow it to melt.

Add the marinated chicken in batches, then cook each side for a few minutes until done. Transfer onto a clean plate. Repeat the process with the rest of the chicken.

In the same skillet, add ginger, garlic, onion, cayenne, coriander, and chili powder. Sauté until aromatic.

Add the tomato sauce and stir until well blended. Allow the mixture to simmer for about 5 minutes. Make sure to stir from time to time.

Add the coconut cream and stir until well blended.

Put the chicken back into the skillet, then toss until well coated.

Simmer everything for about 10 to 15 minutes over medium-low heat. Sprinkle salt and pepper to taste.

Sprinkle your preferred herbs on top to garnish.

Notes:

Leftovers can last up to 5 days in the fridge for 3 months in the freezer.
