Ingredients:
1 tbsp kosher salt
8 oz penne pasta
1-lb raw shrimp (deveined, cleaned, tail removed)
2 tbsp Cajun seasoning
1 tbsp olive oil
1 tbsp butter
1 c heavy cream
½ c parmesan cheese
Directions:
Place a large pot with salted water on the stove and turn the heat to high. Allow the water to boil.
Add the pasta and cook until firm to bite.
Reserve 1/2 cup of the pasta water, then drain. Rinse with cold water to stop the cooking process.
In a mixing bowl, add olive oil, shrimp, and Cajun seasoning. Toss everything until well mixed.
Place a large skillet on the stove and turn the heat to medium-high.
Add butter and allow it to melt.
Add the shrimp and cook each side until golden brown. Remove from the skillet onto a clean plate.
Turn the heat down to medium-low, then add the heavy cream. Scrape the bottom to get the brown bits. Simmer the cream until it starts to bubble.
Turn the heat down to low, then add the Parmesan cheese. Stir until well mixed.
Put the shrimp back to the skillet as well as the cooked pasta. Toss everything until well combined.
Add the reserved pasta water if the texture of the sauce is too thin.
Serve and enjoy!
