Ingredients
- 1 cup granulated sugar
- 1 cup brown sugar, packed (light or dark, depending on your preference)
- 4 large eggs, beaten
- 1 cup vegetable oil (or substitute with melted butter for a richer flavor)
- 1½ cups self-rising flour (see notes for a DIY substitute)
- 1 teaspoon vanilla extract
- 2 cups pecans, finely chopped (toast them for extra flavor!)
Instructions
Step 1: Preheat the Oven
Preheat your oven to 350°F (175°C). Lightly grease and flour a 9×13-inch baking dish to prevent sticking.
Step 2: Mix Wet Ingredients
In a large mixing bowl, combine the granulated sugar, brown sugar, beaten eggs, and vegetable oil. Stir with a wooden spoon until the mixture is smooth and well combined.
Step 3: Add Dry Ingredients
Gradually stir in the self-rising flour until fully incorporated. Add the vanilla extract and mix well.
Step 4: Fold in Pecans
Gently fold in the finely chopped pecans until evenly distributed throughout the batter.
Step 5: Bake
Pour the batter into the prepared baking dish, spreading it evenly. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Step 6: Cool and Serve
Remove from the oven and allow the bread to cool in the pan for about 15 minutes before slicing into squares. Serve warm or at room temperature.
