Key Ingredients
Graham Cracker Squares: The crispy base and top of these sandwiches, graham crackers provide that classic s’mores crunch and flavor. You can use chocolate or honey graham crackers for a flavor twist.
Instant Chocolate Pudding: A rich and creamy chocolate layer that mimics the melted chocolate in traditional s’mores. Make sure to use the instant variety for a quick and easy prep.
Marshmallow Creme: The key to the marshmallow layer, this fluffy spread adds sweetness and the iconic gooey marshmallow flavor without the need for roasting.
Cool Whip: Folded into the marshmallow creme, Cool Whip adds lightness to the filling and creates a dreamy texture. You can substitute with whipped cream if preferred.
Cream Cheese: Softened cream cheese adds richness and stability to the marshmallow layer, ensuring it holds its shape even after freezing.
Instructions
Step 1: Prepare the Chocolate Pudding Layer
Mix the Pudding:
In a large mixing bowl, whisk together 1 box (3.9 oz) of instant chocolate pudding mix and 2 ½ cups of milk until smooth and thickened.
Let the pudding set for about 5 minutes.
Line the Baking Dish:
Line the bottom of a 9×13-inch baking dish with aluminum foil or parchment paper, ensuring it extends slightly over the sides for easy lifting.
Spread the Pudding:
Pour the prepared chocolate pudding into the lined dish.
Use a spatula to spread it evenly across the bottom. This forms the base layer of the sandwiches.
Step 2: Prepare the Marshmallow Creme Layer
Combine Cream Cheese and Marshmallow Creme:
In a separate bowl, combine 4 oz of softened cream cheese with 7 oz of marshmallow creme.
Beat the mixture with an electric mixer on high speed until creamy and smooth.
Fold in Cool Whip:
Gently fold in 8 oz of thawed Cool Whip until the mixture is light and fluffy.
Spread Over Pudding Layer:
Carefully spoon the marshmallow mixture over the chocolate pudding layer.
Use a spatula to smooth it out evenly across the top.
Step 3: Freeze and Assemble
Freeze:
Cover the dish with plastic wrap or foil and place it in the freezer for at least 6 hours, or until completely firm.
Slice into Squares:
Once set, lift the layered dessert out of the dish using the foil or parchment paper.
Place it on a cutting board and slice it into 16 equal squares.
Assemble the Sandwiches:
Take two graham cracker squares and sandwich a pudding-marshmallow square between them.
Gently press the graham crackers to secure the filling. Repeat for all squares.
Step 4: Serve and Store
Serve Immediately:
Enjoy your homemade S’mores Ice Cream Sandwiches as a cool, indulgent treat.
Store Leftovers:
If not serving immediately, return the sandwiches to the freezer in an airtight container. Separate layers with parchment paper to prevent sticking.
